Jack Rellstab started making knives at 12. He walked into our Jackson store with a few blades on consignment. We hired him on the spot. That was the right call.

This is his latest project: a 6-piece steak knife set. Sanmai steel — three layers, forge-welded together — built to hold an edge and show its work. Each blade profiled from a brass template so all six match. Because when you're making a set, consistency isn't optional.

The handles are Rocky Mountain elk antler. Naturally shed — found in the high country, not taken from it. Lapped flat on a granite block, epoxied and pinned by hand. No two scales are identical. That's not a flaw. That's the point.

One set. Six knives. They leave together.
